Growing a sourdough starter involves a simple process of feeding and nurturing the natural yeast and bacteria present in the mixture. Here's a step-by-step guide on how to grow your sourdough starter:
Day 1: Start by mixing equal parts of flour and water in a clean glass jar. For example, you can use 50 grams of flour and 50 grams of water. Stir well to combine.
Day 2: Discard half of the starter mixture (approximately half of the total weight) and then add the same amount of flour and water as on the first day. Stir well to incorporate.
Day 3: Repeat the process of discarding half of the starter and feeding it with equal parts of flour and water. By this point, you should start to see some activity in the form of bubbles and a slightly sour smell.
Day 4: and onwards: Continue discarding and feeding the starter once a day, maintaining equal parts of flour and water. As the days progress, you should notice an increase in activity, with more bubbles and a stronger sour smell.
Daily maintenance: Once your starter is showing consistent signs of activity (bubbling and rising), you can switch to a daily feeding schedule. Discard a portion of the starter, leaving only a small amount (e.g., 50 grams), and feed it with equal parts of flour and water.
Consistency: As your starter grows, you can adjust the consistency by varying the amount of flour and water. A thicker starter (with less water) will result in a more tangy flavor, while a looser starter (with more water) will have a milder taste. Experiment to find your preferred consistency.
Patience: Growing a strong and active sourdough starter takes time. It may take anywhere from 5 to 10 days or even longer for your starter to become fully mature and ready for baking. Be patient and consistent with the feeding process.
Remember to keep your sourdough starter at room temperature and loosely covered with a cloth or plastic wrap during the growing process. Once your starter is mature, you can use it to bake delicious sourdough bread and other fermented treats. Happy baking!
