4. Incubate: Pour the mixture into a clean container (like a glass jar) and cover it with a lid or plastic wrap. Place it in a warm environment (like an oven with the light on or a yogurt maker) to maintain a temperature of about 110°F (43°C). Let it sit undisturbed for 6 to 12 hours, depending on how tangy you want your yogurt. The longer it sits, the tangier it becomes.


5. Strain the Yogurt: After incubation, you’ll have a runny yogurt. To make it Greek, line a fine mesh strainer with cheesecloth and pour the yogurt into it. Let it drain for 2 to 4 hours in the refrigerator, depending on how thick you want it.


6. Store the Yogurt: Once strained, transfer the yogurt to a clean container. It can be stored in the refrigerator for up to 2 weeks. Reserve a small amount to use as a starter for your next batch!
